Zucchini noodles seem to be all the rage, so I tried a couple of different recipes. My first attempt was horrible and left me with a pan full of soggy strips of veggies. I overcooked the zucchini. The second attempt was slightly better, but still didn't yield anything delicious. I had almost completely given up on the pasta alternative when I found this website with this recipe.

You have to click all the way down to the bottom of the page. The recipe looks a little intimidating, but it is well worth the effort. I didn't use any chicken and added more peanuts and cilantro.

Updated Granola Recipe
I bought some granola the other day and the raisins were too tough and burnt. This lead me to make my own granola. Here's the recipe I based it on:
Basic Granola on CHOW
This recipe calls for 1/3 cup of honey. I didn't realize I only had 1 tsp. of honey left, so I substituted the rest of the honey with Raw Organic Agave Nectar. If you want this to be vegan granola, skip the honey.
For the fruit, I chopped up 1/2 cup of pitted dates
For the nuts, I mixed in 1/2 cup chopped raw almonds and 1/3 cup walnuts
I also happened to have some ground vanilla (a dear friend from Hamburg brought it back for me).
My granola is gluten-free because I used gluten-free oats. If you (or the people you share this with) don't have issues with gluten, you can use regular old fashioned oats.

Vegetarian Dinner Menu
Hello, fellow gourmands.
I am having some friends over for dinner tomorrow night. Here's our menu:
Heirloom tomato salad with basil ribbons
(this is basically a caprese without the mozzarella)
Spiced cilantro peas with curry
Saffron rice
Mushroom medley
Roasted peppers
For dessert, we will have stone fruits with sorbet
